For a limited time, enjoy a pairing of Kushiro Ezo Corned Venison with three drinks: Akkeshi Whisky 24 Seasons’ Shosetsu, Keichitsu, and Seimei labels.

The Akkeshi Whisky 24 Seasons Series takes its name from the traditional 24 seasonal divisions of the year. This Japanese whisky is the pride of Akkeshi Distillery, in the town of Akkeshi, Hokkaido.The year is divided into four seasons, which are then subdivided into six “solar terms.” These terms give us a sense of the changing seasons.

The three whiskies we offer here start with the latest in the 24 Seasons Series, Shosetsu. This word, meaning “The Greeting of Snow,” refers to when the weather turns even colder and snow starts piling up.The next is Keichitsu, a phrase that means “Life Awakens,” suggesting the beginning of spring. The last, Seimei, “Radiance of Pure Life,” is when spring deepens, bringing fresh green leaves and blossoming flowers. The selection offers the feelings of transitioning from Japan’s winter to its spring.
These whiskies will be poured into graceful miniature rounded glasses decorated with Edo kiriko, or cut glass, patterns that sparkle elegantly. The perfect size to fit in the hand, they also look beautiful, allowing you to fully enjoy the marriage of whisky and food.

Chef Nobuko Kimura pairs this Akkeshi whisky with Kushiro Ezo Corned Venison. Corned venison is venison done in a corned beef style.The two variations of Corned Venison give the peated malt whiskies, distilled drawing on the local terroir, even greater depth.

The latest in the Akkeshi 24 Seasons Series, this blended whisky brings to mind the first snows of winter as autumn bids farewell. Harmonizing the whole, it offers citrus scents with a soft, calming sweetness, and a youthful, dignified peat aroma in its lingering finish.

Kushiro Ezo Corned Venison

On the left of the photo, green mustard, our house sauce drizzled over corned venison, and topped with mini tomatoes in an arrangement that provides a superb match between the flavor of the venison and the acidity of the other ingredients.
On the right of the photo is a Japanese-style arrangement with the distinctive smoky aroma of Hokkaido caciocavallo lightly toasted on the surface and given a tang from green Japanese peppercorns pickled in soy sauce.
Enjoy this smoky, rich and luxurious pairing that goes so well with Akkeshi whisky and its characteristic peatiness.
